A pinch of the Pacific, a splash of Asia, bright colors and a whole lot of freshness: That's poké, the national dish from Hawaii. Poké means " cut into small pieces " and refers to bowl dishes that show the island's attitude to life particularly well. Raw fish or another protein wonder meets rice or noodles and is served with healthy mix-ins and sauces in a bowl. It tastes aromatic and light, a bit like sushi - but then quite different.
