It is a clear, fresh single origin espresso with fruity acidity. The Arabica beans of the Catimor H528 variety were grown by Thiha Gyawalie at Ruby Hills Farm in Mogok. Thiha is one of the youngest coffee farmers in Myanmar and produces in southern Shan State. The washed Catimor H528 has won several awards for its great quality. Thiha is also one of the first coffee farmers in Myanmar to work purely organically and certified on his farm at an altitude of 1500 meters. In 2018 he won the Myanmar Coffee Competition with 87 SCA points.Delightful taste with notes of cherries and cinnamon<br>Once the coffee cherries have been picked at Thiha's farm, they are peeled and then fermented in tanks for 48 hours. They are then dried in the sun for three weeks. The espresso was roasted by hand in Berlin by the specialty coffee roastery FIRSTCRACK Roastery. The Ruby Hills espresso has a great, aromatic taste with notes of cinnamon, honey and cherries.
