Reixagó Blau de Jutglar artisan raw cow´s blue cheese, from the town of Olost - Lluçanès (Barcelona), Catalonia.
Blue cheese with a soft paste and mixed coagulation. The paste is yellowish-white with greenish streaks, with a rough, caramel-green rind with whitish patches. The texture is creamy and the flavour is balanced and intense.
The Reixagó estate (Finca Reixagó), very close to Olost del Lluçanés (Barcelona), is a centuries-old farmhouse and agricultural and livestock farm which, like all those in this natural region, has undergone a long series of changes and agricultural uses to the rhythm of history at any given time.
Maturation of 8 weeks
