Made by Que’s Lider, in Ripollet, Catalonia, Spain. This El Nostre cheese is a matured goat cheese made with pasteurised goat milk, soft paste, with a very fine and consistent texture and a slight citrus flavor with the characteristic aroma of mushrooms typical of this type of cheese. White and smooth rind with the presence of mold (Penicillium candidum). It is matured for 15 days in ideal temperature and humidity conditions to encourage the development of molds on the rind, which give the cheese a pleasant white appearance and fresh flavor similar to freshly fallen snow. The taste is of fresh goat's milk at first, but it evolves in the mouth and allows you to appreciate the flavours of mushrooms. It is an accompaniment to cold salad dishes or to gratinate in the oven, for pasta or in pastries. It is served alone with bread and a glass of young, fresh white wine.
