Former chef and trained viticulturist
and oenologist Nicolas Bourget, fell in
love with Paros island and moved
there from France, with his wife Marie
Astrid and their children. In their
small, newly built winery, they just
produced their first four labels from
crawling vines (“aplotaria”) of local
varieties, following natural practices.
With absolute meticulousness they
produce wines that perfectly combine
the expression of the rugged
landscape of Paros, with French
elegance. Amos (translated as
“Sand”) is the domaine’s
monovarietal Assyrtiko, which shows
its typical acidity backbone, wrapped
with the domaine’s signature French
finesse.
