This mind-bendingly delicious masterpiece of a Swiss natural orange wine is 100% Fendant, a rare Swiss local grape, from old vines of schist-limestone soils. In Hans’ own words: “We called this ‘Disobedience’ in honour of H.D. Thoreau. Why? Because it is a Fendant going against all current academic opinions of what constitutes a good wine. Fermented on the skins with natural yeasts, aged in wooden barrels, unfiltered and without added sulphites.” Skin contact is of about 12 weeks and the wine is bottled with no fining, filtration or added SO2. Powerful, dynamic and always electrifying: dried jackfruit with saffron honey, turmeric, caramelised cashews and lemongrass tea.
