This fantastic vineyard on marly limestone in
Monabelles of Paliki is a legacy of Sclavos
from his grandfather. The 80-year-old
ungrafted, prophylloxeric vineyard has
between the rows of Mavrodaphne scattered
stumps of the Tsaousi and Vostylidi varieties.
A mixture of white and red grapes (field
blend) which is a tradition in Kefalonia and
other historical regions. Eurybiades kept this
tradition by co-vinifying Mavrodaphne and
Vostylidi in the red Synodos. A "quiet"
vinification in accordance with his philosophy,
allowing the excellent Mavrodaphne fruit from
the old vines to bloom. Vostylidi, in turn,
raises the bar in the blend in terms of
structure and tannic complexity, but without
taking anything back from the gentleness of
Mavrodaphne's character.
