This is a special variety of bean found only on our island, with the scientific name Vigna Unguiculata. It is dry-thermal, it has a smaller size and color and in the past large quantities left from Lemnos to the Aegean and Northern Greece. Its production presents several difficulties, especially in the stage of purification and separation from foreign substances. It is ideal for summer, fresh salads while it is also cooked classically as a red soup!
