Food, besides being delicious, can also be very beneficial—it can energize us, invigorate us, heal us, and make us happy. At Restaurant Veggic, this is entirely possible, and we cook according to this principle. The heat treatment is as gentle as possible so that the food retains its wealth of vitamins, minerals, microelements, and omega fatty acids. We dry our food in a dehydrator at 48 degrees Celsius and prepare it mainly by steaming and baking. Frying and microwaving have no place in our kitchen. We make bread with sourdough and flatbreads from whole grain flours—wheat, rye, and spelt. For those who avoid gluten, we bake flatbreads from gluten-free flours. We have completely replaced table salt with Himalayan salt, and white sugar with raw cane sugar, maple syrup, honey, agave, and stevia.
