The harvest and cold extraction are happening the same day, with extra care for the olives not to be hurt. The extraction is carefully monitored with temperatures below 27 C and duration of less than thirty minutes. Stored in stainless still nitrogen filled tanks and transferred in covered glass bottle to protect from sun and oxidisation. Di Morea is the effort of a family owning land at South Messinia, Trifilia hill at an altitude of 700m that practise organic farming.
