The grapes for this vintage are harvested from vines with an average age of about 25 years. It is harvested by hand, pressed through a cushion press and then left to stand for 24 hours at a low temperature. The wine is then transferred into oak barrels for incubation and fermentation using indigenous yeasts. The wine is transferred into oak barrels for 12 months, with 40% of the barrels being new. The wine is then transferred into stainless steel tanks for three months before bottling.
