Paul and Willy began working in this vineyard and converting it to organic in 2017. Based in Chassey-le-Camp (between the Maranges Valley and Bouzeron), these vineyards are made up of clay and limestone soils, and are quite sandy. Direct press, then raised in old barrels for 10 months. No bâttonage, no fining or filtration, and no SO2 at any stage.
The Bourgogne Aligotè by Domaine Ami has a certain style: fresh, rustic and yet fine. Processed in a strictly artisanal manner, it is a white that is produced from Aligoté grapes, a variety often undeservedly mistreated. Hints of citrus emanate from the glass, there are caramel and hazelnut on the finish then in the mouth is a swirl of tension, freshness, pleasant 'funkiness'. To drink now or wait a few years for a full and more evolved expression.
