Madeleine Chocolate
The Madeleine is a Lorraine cake from the town of Commercy and is said to be named after a young cook, Madeleine Paulmier. At a reception given by Duke Stanislaw Leszczyński, she is said to have suggested her grandmother's recipe for dessert after a quarrel between his steward and his cook - the cook leaves the castle furiously and without having prepared dessert. In the absence of anything better, the ex-king of Poland had to condescend to accept this simple dish. The noble gathering enjoyed this impromptu dessert. The Duke was relieved and wanted to be introduced to the woman who had performed this "miracle". He decided that the little cake formed in a conch shell should bear the name of the young heroine - Madeleine.
