"The Madeleine is a Lorraine little cake from the village of Commercy and is said to bear the name of a young cook, Madeleine Paulmier.
At a reception given by Duke Stanislas Leszczyński, after a quarrel between his steward and his cook - the cook left the chateau in a rage and without having prepared the dessert - she is said to have suggested her grandmother's recipe as a dessert. For lack of something better, the ex-king of Poland had to deign to accept this simple dish. The noble assembly enjoyed this improvised dessert. The Duke was relieved and wanted to be introduced to the woman who had performed this ""miracle"". He decided that the little cake formed in a conch shell should bear the name of the young heroine - Madeleine."
