Sümela is derived from the famous, formerly Greek Orthodox Sümela monastery in north-eastern Turkey. Mother Bahceci, who passed on all the delicious recipes from the Black Sea region to the next generation, comes from this very region. The monastery of the Virgin Mary from Byzantine times is one of the most important holy places of the Orthodox Church in Anatolia and was a significant place of pilgrimage for Christians and Muslims alike. The name " Sümela " in this context derives from the Greek word melas (black), which presumably refers to the colour of this icon of the Virgin Mary and/or to the rocks into which the monastery was cut.The world of Sümela holds an extensive culinary journey to Turkey and the Orient.
