Halloumi ist ein aus Kuh-, Ziegen- und Schafmilch hergestellter Käse aus Zypern. Der Grillkäse von Dodoni ist leicht mit Minze verfeinert und kann entweder gegrillt oder in der Pfanne gebraten werden. Halloumi gehört in nahezu allen Gaststätten Zyperns zu den Standardgerichten. Ein typisch zypriotisches Frühstück besteht übrigens aus Halloumi mit Spiegelei. Schneiden Sie den Halloumi in fingerdicke Scheiben und grillen oder braten ihn "natur" in heißem Olivenöl ohne Salz und Pfeffer. Wichtig hierbei ist, dass es bei hoher Temperatur geschehen sollte, sonst kann der Käse zäh werden und die im Halloumi enthaltenen Minzestückchen können ihre Aromen nicht voll entfalten.
