Costa Rica Las Trojas Coffee Beans

Ndia-ini lies 5km from Mukurwe-ini and uses water fresh from the Gikira river for processing. The proximity of the river gives the factory its name which translates to ‘river ponds’ in the Kikuyu language. Kimandi is situated in the village of the same name, close to Kabare town. The word Zawadi itself is Kiswahili, and means ‘Gift Specialty coffee is defined as any coffee that scores above 80 points on a 100 point scale. Typically, speciality coffee is grown at high altitudes, with much care and attention from the farmer. From there, it is sold at a premium to coffee traders, or direct to roasters. Medium roasted Altitude: 1400 m - 1700 m Weight: 250g Tasting notes: Walnuts, berries, pecans, melted butter and chocolate taste, very thick but clean body.

Peru Chanchamayo Coffee Beans

Chanchamayo produces approximately 40% of Peru’s total coffee production. This coffee is grown using a typical small-holder model with each small-holder producing less than a tonne of coffee per harvest. Although Chanchamayo is a valley, it is still 1350 metres plus above sea-level. The Arabica beans grown in Chanchamayo cover (in general) Caturra, Typica, Pache, and Bourbon varietals. At these higher altitudes the beans tend to be shade-grown, which adds density to the bean and gives a more complex and pleasing flavour in the cup because it has grown more slowly, due to the shade. This coffee is classed as SHG (strictly high-grown) which means that the coffee is all grown at 1350 metres or above. Papua New Guinea

The story of coffee in Papua New Guinea is unlike any other origin. Roads are often nonexistent, communities are incredibly remote, and most coffee is grown casually in gardens alongside a family’s food supply. In fact, 99 percent of coffee is grown by individuals with an average farm size of .83 hectares and an average production of 10 bags per year. Without access to mills, these producers pulp, ferment, wash and dry their own coffee, selling small volumes of parchment. Additionally, due to the extreme lack of access, coffee often makes it to exporters through roadside collections or aggregator pickups. This means the large lots of coffee we see exported are in fact the accumulation of many, untraceable micro-volumes which have been combined for processing. Brazil Yellow Bourbon

Baixadao is located in the Mantiqueira de Minas – one of the most award-winning regions in Brazil. In 2011 it applied for recognition as a Geographic Indication (IG), in the Modality Indication of Origin (PGI) for its worldwide reputation for producing speciality coffees with a high quality and unique profile. This is due to be finally granted in full this year. This coffee is grown on the Baixadao farm (awarded the highest ever Cup of Excellence score in any country in 2015), owned by Sebastião Afonso Da Silva of the Afonso family, who along with his son, also take care of Santa Izabel, Santa Terezhina, Santa Martina, and Sao Sebastiao farms. Growing up around rice farming, Sebastião Afonso da Silva started off with an idea to increase his and his family’s income. Getting just the one hectare in 1996, the farm is now 350 hectares in total with 80ha under coffee and 80ha under forest. The farm uses a zero-cropping methodology with 35% of the farm under this process at any one time. Zero cropping takes place after harvesting has finished. The tree is stumped or skeletoned – all productive branches are removed but the root system and trunk left intact. The following year on from this, the tree spends all its energy on re-growing branches which will turn into producing branches the next year. This means there is one whole year without any production. The reinvigorated tree produces much more cherry over the next couple of years that mitigates the on/off cycle (as well as the fallow year) and gives a much more consistent output over the farm. In any normal year they can still be harvesting up until the last day of December. The altitude is very high for Brazil, rising to over 1300masl at points, meaning the maturation is slower and therefore harvesting a bit more spread out. It is from these later lots that they have achieved – twice – the highest ever Cup of Excellence score of any country with 95.18 in 2015, using Yellow Bourbon from the same plot as this. The farm is well segmented by varietal and aspect – red Acaia, yellow Catuai, Catucai, Bourbon and Arara are sectioned off with each having its own requirements and timescales. This means that it is perfectly suited to the production of microlots as well as its main crops
