Our "Pizza a Canotto", born near Napoli, is as an alternative to the beloved thin large Neapolitan pizza, features a slightly smaller size, low base, pronounced and crunchy crust, and evident air pockets, achieved through long fermentation and special dough techniques. A pizza with high hydration, where the dough has a water-to-flour ratio pushed up to 80%.
