Fermentation: the grapes – 5 different varieties of grapes, local and
international, are harvested with a light degree of overmaturation; vinification
takes place at low temperature (max 27° C) for 8-12 days, followed by racking
and a stay in new 225-litre barriques. The alcoholic fermentation ends in
wood barrels and the malolactic fermentation takes place naturally, a few
weeks after the end of the primary fermentation.
Aging: in barriques for 24 months, on fine lees for 8-9 months.
Refining: in bottle, for at least 12 months.
Aging potential: Poco per Pochi is a wine with a great ageing capacity.
Description: it’s an elegant ruby red wine, with pleasant notes of red fruits
(plums, blackberries and cherries) and hints of spices. Full bodied wine, dry
but round palate with an elegant fruity finish and soft tannins
