Grapes; Merlot 55%, Cabernet Sauvignon 30%, Cabernet Franc 15%
Type of soil; varying, mostly sandy and rich of silt
Age of vines; 10-15 years
Harvest period; end of september
Fermentation; the grapes are gathered when they reach the perfect phenolic maturation. The maceration
takes place at 35°C for 12 hours; fermentation at controlled temperature (max 29°C) follows,
with post-fermentative maceration on the skins. Overall, the fermentation lasts 12 days. The
natural malolactic fermentation of the Cabernet Sauvignon and Cabernet Franc takes place in
barriques where the wine rests for 6-8 weeks
Refining: in the bottle for at least 3 months
Aging potential; best to be drank young, within 2-3 years from its vintage
Description; on the nose it shows a rich bouquet ranging from fruits of the forest to underwood, with a
delicate balsamic nuance. Full bodied, dry and round, it shows silky tannins and a nice mineral
touch. The long and complex finish recalls the fruity and deeper notes perceived on the nose
Food pairing; suitable for cured meat and cheese, to rich pasta dishes and meat main courses
Serving temperature; 16-18 degrees
