Method of fermentation: hand-picked grapes reached the ideal level of
maturation in small perforated boxes. Drying in the cold room follows
for 4-5 months. Pressing of the grapes and hot maceration (35 ° C) for 12 hours; then
fermentation in stainless steel with the skins for about 10 days. After racking,
the fermentation continues in barrique, very slowly, until natural
interruption, when the wine still has a high sugar residue and a
alcohol content of over 14.5%.
Aging: for one year in 3rd and 4th passage barriques.
Aging: in the bottle for at least 6 months.
Aging capacity: immediately enjoyable, it can also be appreciated in different flavors
years after the harvest.
Description: Rich in chromatic matter, Pe ’Sfizio has a full ruby color
with garnet shades. The nose is characterized by the variegated bouquet in which it is
followed by notes of dried fruit and spices (cinnamon, nutmeg), cherry underneath
spirit, chocolate, berry jam and licorice stick.
Tasting; shows an excellent balance between sweetness and roundness on the one hand and tannins velvety and flavor on the other. Long persistence finish in which notes return
fruity and spicy perceived on the nose
