Instead of focusing on one region or cuisine, we draw inspiration from many regions, looking to how the trade routes of the world have shaped gastronomy for centuries. For our street food concept this takes us to entirely separate parts of the world, while for our restaurant concept we travel along parts of the historical Silk Road, from West to East, thinking to what people chose to eat when they didn’t have access to animal products, or simply wanted to avoid eating them.
