A part of this freshly made Zivania, already pure, refined and unique on its own, is going to mature for a few years in the winery's most valuable assets: the old oak barrels!
All different, well treated and perfectly suitable for that very purpose, thanks to their original usage which was the aging of several old Anama Vintages, one after the other.
Time was favoring them as they got to develop their own unique character, eventually playing a significant role to the evolution of those fine spirits.
A carefully selected blend of different Zivania vintages, such as three, five and eight years aged into Anama Casks, compose the second individual entity of that Zivania Trilogy, this well-balanced spirit of grate complexity and undisputed finesse.
The fire burning under the pot, is fueled by pinewood, sourced out of the neighboring forest, while consciously following a responsible foresting policy.
And that is how its made!
