Fabrice Gass produces champagnes that are hard to forget once you taste them. It belongs to the category of RM (Récoltant Manipulant), that is, it grows, produces and bottles champagne under its own brand with at least 95% of grapes from privately owned vines. Filaine Cuvée Spéciale NV is based on Pinot Noir with smaller amounts of Chardonnay and Pinot Meunier and the dosage is between 4-5 g. This is a champagne, complete, expressive, with depth and remarkable balance. With malolactic fermentation taking no part in any of his wines, and vinification in 100-year-old barrels, Fabrice is here to prove that non-vintage champagnes get better if you wait a few years.
