Ni' is part of the trilogy of wines MiNiMus. An impressively approachable orange wine, made in clay amphora. Juxtaposition between the deep gold colour and restraint on the nose followed by a bone dry, flinty, dried peach toasty flavour with an almost fino sherry quality lurking in the background. This shows the potential of natural wine, clean but altogether like 'walking on the wild side'.
Very careful selection of the grapes, foot stomped, spontaneous fermentation in amphora with no additions, remaining with the marcs for 1 month, unfined and unfiltered, with a small amount of sulphites (19ppm total sulphites). Finally maturation for 4 months in old French oak barrels (6 years old). Linear layout of organic farming in Plagia for the Malagousia and in Bidablas for the Roditis.
