Vineyards at the high altitude of the Vouni Panagia region, a vinification with spontaneous yeasts and an approximately 40% of the wine in barrel, in contact with the fine lees and batonage.
If Spurtiko favors fine lines, lower alcohol and minerality, Promara is a variety that is richer, fatter and with more ripe fruit. Equally rare in the vineyards of Cyprus, a little less than 0.2% of the total area, it is the earliest grape of all the natives of the island. It owes its name to this fact. The vines are young, 15 years old, and authoritarian.
The richness of the variety is therefore also enhanced by the winemaking techniques, but here the barrel is fully "put" into the wine, giving excellent balance and levels of complexity. In total the aging is for 6 months and leads to an exuberant overall which will age very nicely, with slightly dry fruit elements and ripe peach.
Ripe aromas revolving around stone fruit and particularly peach, honeyed character and richness in the mouth with very nicely integrated barrel and acidity that "ties" everything together. Multi-layered, exuberant, complex, full of richness, a beautiful Mediterranean wine from a variety with great quality potential.
