Modern Japanese cuisine gives us the opportunity to deviate from the strict path of traditional culinary rules and practices, heading in the direction of fusion. The food is based on Japanese combinations of ingredients but is presented in a contemporary European style. White flour is not used, and the use of milk, dairy products, and sugar is reduced to an absolute minimum. Fresh products (vegetables, meat) come from small farms, while long-lasting staples are Japanese—soy sauce, mirin, sake, rice flour, tempura, seaweed, and adzuki red beans. The menu is created seasonally. Our team strives to work with local producers and suppliers (“Omaya Ranch,” “Chiflik Livadi,” “Yarlovo Farm,” “Sunny Farm – Ablanitsa,” a duck meat farm in the village of Braniste, and others), while our fish is sourced both from Thessaloniki and the largest fish markets in Europe. We select wines together with our team of sommeliers, including labels from around the world. Bulgarian producers we work with include “Damyanitsa,” “Marash,” “Borovitsa,” “Nisovo,” and others.
