We only use 100% wholemeal flour and wholemeal meal, home-grown sourdough from baking ferment and whole sea salt. We bake in a stone oven and use fresh DEMETER butter and blossom honey from controlled organic cultivation and no chemical additives. We use freshly cultured organic yeast for our yeast pastries.
