Although nori seaweed is the most well known variety of Japanese seaweed due to its use in sushi, there are many other seaweeds that feature heavily in Japanese cuisine, such as wakame seaweed in miso soup, kombu kelp for making dashi and hijiki seaweed for salads. Japanese seaweed is incredibly healthy and provides a rich source of vitamins and minerals.
